I'm jealous of your Duggan's experience - mine was really disappointing! I've just posted a review of it here: http://poutinetoronto.blogspot.com/2010/01/disappointed-by-duggans.html.

Mostly, I'm baffled by your duck confit poutine photo. Check out the photo on my blog - it's like we were at two different restaurants...

Love the blog, by the way!

in a dish like that i wouldn't expect the pork hock skin to be crispy
It's very much like the alsatian style of pork hock (with the sauerkraut to boot.. no pun intended)

I, too, had the pork hock and was equally impressed with it. Delicious and incredibly tender. My only complaint was that the skin was soft and not at all crispy - all that lovely crackling and I just sloughed it onto a side plate for disposal. Granted, I think my arteries were happy I didn't get to eat it. Will definitely be eating there again!
